2T lemon juice
1 clove garlic
.5 cup olive oil
pint grape tomatoes
2/3 cup parsley
2 scallion
1/3 cup mint .5 cup cucumber
Directions
Cook the Quinoa. Cool. Mix oil, lemon juice and pressed garlic. Add everything together, suitably chopped, minced or pressed.
