Ingredients

    1 T olive oil
    2 cups red onion
    1 green pepper chopped
    1 red pepper chopped
    2 finely chopped jalepenos (with or without seeds)
    1 garlic HEAD
    .25 cup tomato paste
    4 cups vegetable broth
    1 t. thyme
    1 t. cumin
    .5 t . ginger
    .5 t. allspice
    .25 t. cayenne pepper
    .125 t. salt
    2 15 ounce cans black beans, drained and rinsed
    .5 cup coconut milk
    lime (optional)
    cilantro (optional)

Tips

Great with lime and cilantro!


Directions

Saute onions, peppers, and garlic in olive oil for approx. 5 minutes. Mix tomato paste in 1 cup veg. broth and add to vegetables. Add vegetables, beans and spices to crock pot and cook for 8 hours on low. Add coconut milk at end and serve.
