Introduction

Pureed apricots are a flavorful substitute for oil. This recipe is easy to modify to suit your taste. Ingredients

    Dry Ingredients
    6 c. oatmeal
    1 c. raw almonds or walnuts
    ½ c sunflower seeds or pumpkin
    ½ c sesame seeds
    ½ c ground flax seeds

    Wet Ingredients
    1 c pureed apricots or applesauce
    1/3 c. real maple syrup or brown rice syrup
    3 T. extra virgin olive oil
    1 T. cinnamon
    ½ tsp. salt

    Optional
    Add after baking: 1/2 c dried dates, cranberries, cherries or raisins

Tips

Be sure to add the dry fruit after baking so it doesn't burn. Keeps well on the shelf. I like to cook the whole package of apricots and store extra puree in the freezer. It's great on pancakes.


Directions

Preheat oven to 300. Mix dry ingredients in a large bowl. Mix wet ingredients separately, then stir into dry. Spread onto two baking pans. Bake 35-40 min, or until golden brown. Stir every 10-15 min. Makes 11 c.

Options: Replace maple syrup with brown rice syrup, honey or agave nectar. Add ½ dried dates, cranberries, cherries or raisins after baking.

Apricot puree: Cook 6 oz pkg. dried apricots in water to cover, Puree, then add water to make 3 cups sauce the consistency of applesauce. Sweeten to taste. Freezes well.
