    2 Cups long grain brown rice cooked
    1 can chunck pineapple no sugar added
    1 TBSP Cornstarch
    1 TBSP Veg oil
    3 Chicken Breast skinless boneless cut into cubes
    2 large clove garlic minced
    1 med red bell pepper large diced
    1 yellow onion large diced
    1.5 cups snow peas havled
    0.5 cup fat free chicken broth
    2 tablespoons lite soy sauce
    1 TBSP Hoisin sauce
    1/4 TBSP ground cinnamon
    1 TBSP ground ginger
    2 TBSP Honey
    salt to taste


cook rice and set aside. drain pineapple setting aside juice. In a cup combine 1/4 cup juice and cornstarch. Mix til cornstarch is dissovled. Set aside. large skillet add garlic, oil and chicken. Brown for 5 minutes, add pepper, onion and ginger add snow peas, saute fro three minutes. add remaining pineapple juice, broth, soy sauce and hoisin sauce, cinnamon and homney. stir cook for another 5 mins or til chicken cooked threw. add pineapple and cornstarch mix until sauce thickens. serve over ric e.
