Ingredients

1 lb ground chicken extra lean
3 medium potatoes
4 large eggs
2 tbsp canola oil
1/3 cup skim milk
2-3 cloves garlic
cooking spray
salt and pepper to taste
Tips
- for the kids I add a bit of shredded cheese and put it under the broiler for a couple minutes.
- for the grownups, I add some salsa, onion, hot sauce, jalapeno pepper or whatever else we feel like that day!
Directions
- Preheat skillet with canola oil.
- while preheating, cube potato into bite sized pieces
- add to oil and cook until golden brown.
- while cooking potatoes, in another fry pan cook the ground chicken until fully cooked. Add to potatoes
- combine milk and eggs and cook in separate pan sprayed with cooking spray until just cooked (a bit wet is still ok).
- mix in with potato and chicken.
- season to taste and serve
Serving Size: makes 2 adult and 2 kids sized servings
