Also great with boiled or roasted chicken breast, this soup is a little different, all the broth is tomato or vegetable juice! I use canned mixed vegetables for convenience, but fresh veggies are terrific in this, too. Ingredients

    1.5 lbs top round or other beef cut suitable for slow cooker
    1 tbsp. oil (vegetable, olive)
    1 64 oz. can tomato or vegetable juice
    2 cans mixed vegetables, frozen mixed or any combination of fresh works, too
    1 can yellow sweet corn
    1 medium onion, diced
    1 tblsp. dried parsley
    salt, pepper, and/or hot sauce to taste

Tips

To make this with chicken, roast or boil boneless skinless chicken breasts and shred, then add chicken, vegetables and juice to a pot (or crockpot) and simmer for an hour. Adjust seasoning if necessary.


Directions

Trim fat from beef. Meanwhile, heat 1 tbsp oil in a skillet large enough for beef roast. Brown beef in skillet. Transfer beef to crock pot, pour a small amount of water in hot skillet and heat until the browned bits are incorporated in the water. Pour this water into the crock pot. Add diced onions. You may add 1/4 cup soy sauce, Worcestershire sauce, or 1/2 a beef a boullian cube if you wish. Set cooker on low and cook for 8 - 10 hours. When beef is very soft, remove from cooker and let cool anough to shred. I drain the crock pot at this point then add the juice, vegetables and seasonings. Turn cooker to high and let simmer for an hour or 2. Adjust seasoning if necessary.
