Ingredients

    *Flour, white, 1 cup
    Oats, Quaker, .50 cup
    Brown Sugar, .25 cup, unpacked
    Baking Powder, 2.5 tsp
    Cinnamon, ground, 1 tsp
    Milk, 2%, .75 cup
    Egg substitute, liquid (Egg Beaters), 3 tbsp or 1 egg
    Vegetable Oil 1/3 cup
    Blueberries, fresh, .50 cup
    Banana, fresh, 1 small (6" to 6-7/8" long) sliced

Tips

Please note nutrition information does not include cinnamon/sugar mixtures. I used a grinder and put very little on top.


Directions

Stir together first 4 ingredients. Make a well in the center. Stir together milk, egg and oil. Add all at once to dry ingriedents. Stir until moistened. Stir in blueberries and banana. Spoon into greased or paper-lined muffin pans. Sprinkle top with cinnamon/sugar mixture. Bake at 400 degree F for 20 minutes.
