Introduction

Ingredients

    Orecchiette pasta - half a box
    1/8 cup olive oil
    3 or more cloves garlic chopped
    14 oz can artichoke hearts quartered and drained
    8 kalamata olives cut in half
    Half a package of fresh spinach about 5 oz.
    1 tbs capers

Tips

adding crushed red pepper with the olive oil and garlic adds a nice bit of zing.


Directions

cook pasta until almost al dente- save about 1/2 to 1 cup of the cooking water
heat olive oil in pan
add garlic - when softened
add kalamata olives, artichoke hearts and capers
Add the pasta to the olive oil and other ingredients
add spinach and as much pasta water as you need to finish pasta to al dente

Serving Size: Makes 4 servings
