    250g roasted hazelnuts, roughly chopped
    250g dark chocolate bits
    1 tablespoon cocoa powder (unsweetened), sifted
    8 egg whites, at room temperature
    3/4 cup castor sugar
    1/4 cup plain flour
    300 ml double cream


Combine 250g strawberries (hulled and sliced) and juice of 1 orange in a bowl. Cover and refrigerate till ready to serve. Spread cream over torte and top with strawberry mixture to serve.


Preheat oven to 180C. Grease and line a 26cm springform pan. Combine hazelnuts. choc bits and cocoa in a bowl. Using electric mixer, beat eggwhites until soft peaks form. Add sugar, a tablespoon at a time, beating well after each additions. Continue beating till thick and glossy. Using large metal spoon, gently fold in hazelnuts and flour. Spoon mixture into prepared pan, smooth top with back of spoon. Bake 35 - 40 minutes or till skewer inserted in middle comes out clean. Stand in pan for 15 minutes before turning onto wire rack. Serve with double cream.
