Ingredients

0.66 x cup Wholemeal pasta - spiral or shells work best
1 x Fresh ripe tomato
0.25 cup x Onion
1 x clove Garlic
1.5 x teaspoon Olive Oil
0.5 x cup Rocket lettuce
1 x wedge Lemon juice
Salt & pepper to taste
Directions
makes 1 - 2 servings
Set pasta to cook in salted boiling water for approx 10 mins
In a pan, add olive oil with diced onion and chopped garlic, cook until golden
Add diced tomato to pan and allow to cook for 5 minutes stiring occassionaly
Drain pasta and add to mixture of onions, garlic and tomato in pan, and stir. You don't have to remove all the water from the pasta, it will add a little extra liquid to the sauce.
Add rocket lettuce, chopped coarsely works best and turn off the heat immediately. If you can't get your hands on rocket, baby spinach works almost as well.
Add lemon juice, salt and pepper to taste, stir and serve.
If you grow your own tomatoes this a great recipe you can throw them into, and it's a light pasta packed full of flavour.
