Ingredients

    2 tbsp - coconut oil
    2 lg. carrots - finely diced
    1 lg. onion - finely diced
    1 lg. red bell pepper - finely diced
    3 lg. stalks of celery - finely diced
    1 c. lean ham diced
    5 c. kale - chopped
    3 c. cannelini beans
    salt and pepper
    5 c. water

Directions

Put coconut oil in dutch oven, heat on medium. Chop 1st 4 ingredients and add to dutch oven. Cook until tender, stirring occasionally. In the meantime, chop ham and kale. Once tender, add ham, beans and water to vegetables. Bring to a boil then reduce to simmer for 45 minutes. Add kale and simmer for 15 minutes.

    Minor change - I used chicken stock for seasoning rather than salt and pepper. Very tasty. - 3/9/15
