Ingredients

1/2 cup wheat bran
4 tsp. unsweet cocoa powder
1 egg 1 egg white
1/2 tsp sodium free baking soda
1/2 tsp. regular baking soda
6 tbsp. stevia granular, more is you like them sweeter
1 tsp. vanilla
Cinnamon Oat Bran
omit cocoa powder and add 2 tsp. cinnamon
reduce yogurt to 5 tbsp. add 1 cup of steiva granular to make them sweeter.
Tips
These make a great chocolate attack. And around 40 cal a muffin, less than 1 gram of fat and 5 carbs.
You could play around with the base recipe and come up with many varieties. Red Velvet would be good for Valentine's day.
Directions
Preheat oven to 350 degrees.
Mix dry ingredients in a medium mixing bowl.
Mix wet in separate bowl. Stir them together. Divide evenly among 6 paper lined muffin cups.
Bake in preheated oven for 15-18 miniutes.
Serving Size: Makes 6 muffins.
