Easy-Peasy Coq au Vin

1C MUSHROOMS, sliced
2 med CARROTS, sliced in coins
1 med ONION, coarsely diced
4oz RED WINE
4oz CHICKEN STOCK
2T VINEGAR (basalmic is tastiest)
1t Herbes de Provence/poultry seasoning
3 GARLIC cloves, smashed and diced
Neither the CHICKEN or NOODLES are included in the NUTRITIONAL information, so be sure to calculate them into your eating plan.
Once you've made this adjust the ingredients to your own tastes. (i.e. I prefer LOTS of garlic...!)
Combine sauce ingredients.
Heat on medium, when simmering ADD CHICKEN.
Cover, reduce heat and simmer for 20-30 minutes or until chicken is done.
Serve over wide egg noodles.
