Ingredients

1 lb. boneless, skinless chicken breasts
1/2 can black beans (drained and rinsed)
1/2 can whole kernel sweet corn (drained)
1 can fat free cream of mushroom soup
1 can water
1 can Rotel diced tomatoes & green chilies
1/2 can fat free chicken broth
1/2 package taco seasoning
3 tbs. chopped fresh cilantro
1/5 cup whole grain brown rice
1/2 cup shredded 2% mexican cheese
2 green onions, diced
Tips
Leftovers make great "take to the office" lunches.
This is great served with tortilla chips (not included in nutrition info).
Directions
Put chicken in crock pot, add remaining ingredients, except for rice and cheese. Cook on high for 2 hours. Add rice, stir and reduce cook for another hour. Remove chicken and shred. Return to pot and continue to cook for another hour. Top each serving with cheese and diced green onions.
