Ingredients

Chickpeas (garbanzo beans), 3 cup (canned or 1.5 C. Dry and soaked for 24 hrs.)
Olive Oil, 1 tbsp
Canola Oil, 1 tbsp
Cumin seed, 2 tsp
Curry powder, 2 tsp
Turmeric, ground, 1 tsp
Ginger Root, 2 tsp
Onions, raw, 1 medium (2-1/2" dia)
Garlic, 2 clove
Red Ripe Tomatoes, 2
Directions
1. Heat oils in large saucepan over med. heat.
2. add cumin seed, curry, turmeric, ginger root, onions and garlic. Cook until fragrant.
3. add tomato and chick peas.
4. Turn heat down to low and cook covered for about 30 min.
Serve over rice.
Serving Size: Makes 5 large portions
