Introduction

Number of Servings: 24

Ingredients

    3.25 cup whole wheat flour
    1.5 tsp salt
    2 tsp baking soda
    1 tsp ground cinnamon
    1.5 cup Truvia Baking Blend
    1 cup applesauce, unsweetened
    4 eggs, beaten (in this recipe i used two eggs and an additional four egg whites. You can substitute all egg whites by just doubling what it asks for)
    1/3 cup water
    2 cups grated zucchini
    1 tsp lemon juice (I used fresh)

Directions

Mix all dry ingredients together, set aside
Mix all wet ingredients together, mix into the dry
Add nuts if you like.
Bake 350 (muffins take about 15-20m, loaf takes about 45 m)

Serving Size: Makes 24 muffins or two loaf pans
