Ingredients

    Rice paper rounds (Asian not Dutch)
    *Please note this is not included in the break down of ingredients for carbohydrates, fats etc. as I couldn't find it on the spark list.
    125g Rice sticks (vermicelli)
    FILLINGS
    *Please note as a vegetarian I have only included vegetables but the fillings can include cooked prawns, crab meat, strips of cooked pork or chicken but you will have to add extra fats etc. to your list.
    Selection of vegetables eg. Finely shredded chinese Cabbage, Cucumber, Spring Onions, Snow Pea Sprouts, Capsicum, Carrot etc. plus fresh coriander & Vietnamese mint if liked.

Directions

1. Soak the vermicelli in a dish of boiling water for about 10 minutes.
2. Drain and cut into short lengths about 9-10cms.
3. Place a round of rice papaer into a bowl of warm water for about half a min. until softened all over.
4. Remove from water and place on a clean tea-towel, pat dry.
5. Place a little vermicelli and selected strips of filling across the rice paper.
6. Fold in sides and roll up into a roll. Serve with favourite asian dipping sauces. Makes 6 +
