    Lean Beef (93-7%) 8 oz
    Onion 1/2 medium
    Bell peppers - 2 medium
    tomatoes - 2 cups fresh chopped or canned
    Brown rice instant- 2 cups cooked
    Black Beans - I can rinsed and drained
    Cayenne pepper 1/2 tsp
    Garlic - 2 cloves
    Lime Juice 1 Tbs
    Chili powder 1 tsp
    Cumin 1/2 tsp


Brown beef, add onion and garlic and cook until onion is soft. Prepare rice according to directions. Bell peppers can be cooked with beef and onions or left in big chunks as in stuffed peppers. Add rice, tomatoes and spices (more or less to taste). Cover and cook until peppers are soft. Stove top or oven at 350 for about 30 to 45 minutes.
