Ingredients

2 boneless skinless chicken breasts
1 teaspoon extra virgin olive oil
1 teaspoon pureed garlic (bottled)
1 teaspoon oregano (ground)
1 teaspoon lemon juice
Tips
I use bottled pureed garlic for this recipe - very smooth and creamy looking not the grainy stuff.
Goes great with salad on those hot summer days.
This recipe doubles (or triples well).
Directions
Mix the olive oil, creamed garlic, oregano and lemon juice until blended. Set aside while you prepare the chicken.
Flatten the chicken breasts by placing them between two pieces of plastic wrap and beating with a meat pounder or a rolling pin. They should be about one half inch thick when you're done.
Spread approximately 1 teaspoon of the garlic mixture of each side of each chicken breast. Stack on a plate and cover with wrap for about 15 minutes.
I usually spray the BBQ or grill with some cooking spray before turning it on to prevent these from sticking.
Preheat the BBQ or Grill and cook these on high for about 5-10 minutes per side (depending how thin you pounded them) until chicken is done and juices run clear.
