Introduction

Ingredients

    1 can lite coconut milk
    1/2 teaspoon vanilla extract
    1/4 cup plus one tablespoon special dark cocoa powder
    4 packets Truvia
    1 tablespoon corn starch (optional, to thicken)

Tips

If you use a full fat coconut milk or coconut cream the final product will be thicker.

You do not have to add cornstarch to the recipe. I was trying to thicken it up a little more.

I used special dark cocoa powder, but you can use regular cocoa if you prefer.

Feel free to sweeten to your taste, but remember that adding more Truvia will increase the carbs in this snack a little.


Directions

Chill coconut milk in fridge for a couple of hours or overnight. Mix all ingredients together in a bowl or container. You can use beaters, a spoon, or a fork. You can freeze solid (will have an icy texture) or just keep in the fridge and use as a sauce.

Serving Size: approximately 1/3 cup, yields about 5 servings
