Ingredients

    1 can Hunt's Diced Tomatoes with Garlic, Basil & Oregeno
    1/2 c. Frozen Spinach
    1/2 c. Fresh mushrooms, chopped
    2 Garlic cloves, minced
    1/2 T Olive Oil
    1 can Northern White Beans
    4.5 c. Al Dente brand Whole Wheat Fettuccine with flax

Directions

Heat olive oil in skillet. Saute garlic for approx1-2mins. Add spinach, mushrooms and beans. Cook for approx 5 mins (until spinach is thawed and separated well). Add can of diced tomatoes and simmer for about 10 mins, will gradually thicken up. While simmering bean mixture, cook fettuccine according to directions. Mix toether and enjoy!

Serving Size: Makes 4 servings (approx 1c. noodles + 1/2c. bean mixture)
