Introduction

A quick, easy, one pot meal that is great on cold winter nights! A quick, easy, one pot meal that is great on cold winter nights!
Number of Servings: 8

Ingredients

    3 medium onions, chopped
    2 large carrots, chopped
    1.5 tbsp olive oil
    2 cans canned tomatoes (diced or whole)
    2 cans red kidney beans
    2 cans mushrooms
    2 blocks extra firm tofu, cut into 1cm by 1cm blocks
    1 cup frozen corn
    4 tsp garlic
    4 tbsp chili powder

Directions

Saute onions and carrots in olive oil over medium-high heat until onions are mostly cooked (approximately 5 minutes). Add all other ingredients and simmer over medium-low heat for an hour. Add more or less chili powder depending on how hot you like it!
