Introduction

I was challenged to make a gluten & dairy free version of a popular restaurant chain's been con queso dip, this is the healthy result. This is one of our go to fast meals & is perfect for parties too! This is one of our go to fast meals & is perfect for parties too!

Ingredients

    *3 cans of black beans, I use Market Pantry

    *1/2 (approx 4 cups) of a 70 oz container of Kroger thick & chunky mild salsa- I've never had a celiac reaction to kroger salsa so this is my fav, but any gluten free salsa should work fine.

    *One packet of Nueva Cocina Taco seasoning mix- no gluten, dairy, msg, or preservatives

    *1 pound of lean 85/15 ground turkey - keep an eye on the ingredients, some brands can contain gluten in added seasonings. Kroger has been my go to brand.

Tips

The chips in the photo are my absolute favorite, Nana's Cocina tortilla chips. Its hard to find tortilla chips that dont produce some kind of reaction in me due to soy or cottonseed oil. These are cooked in peanut oil and taste amazing!


Directions

*Add 3 cans of black beans, a packet of Nueva Cocina taco seasoning (no msg or preservatives), and half of a 70oz container of Kroger salsa to a large pot.
*Simmer on medium while you cooked one pound of ground turkey in another saucepan.
*With an immersion blender puree the black beans and salsa mixture (you can use a blender or food processor as well)
Add ground turkey to the puree and simmer for 15 minutes.

This is great for parties, just use the warm setting on your crock pot.
