Ingredients

    1 cup quinoa, rinsed, drained
    2 ts olive oil
    1 clove garlic, minced
    2 cups water, scant
    1/2 ts salt
    3 ounces chopped spinach
    1/2 cup diced tomato (fresh or canned)
    1/3 cup chopped walnuts

Tips

If using canned tomato, add with the water. If using fresh, stir in at end with the spinach.


Directions

Heat the oil in a saucepan and saute the quinoa until golden, about 10 minutes. Add the garlic and saute 30 seconds. Add the (canned tomato), water and salt, bring to a boil, cover, reduced heat, simmer until the water is absorbed, about 15 minutes. Stir in the spinach, (fresh tomato) and walnuts.
