Introduction

These Muffins were originally inspired by an old recipe I found, however I changed it up so they are very diet friendly and virtually fat-free. These Muffins were originally inspired by an old recipe I found, however I changed it up so they are very diet friendly and virtually fat-free.
Number of Servings: 12

Ingredients

    100 g Whole Wheat Flour
    50 g all-purpose flour
    1 cup Blueberries, frozen (unsweetened)
    70 grams Granulated Sugar
    3/4 cup Skim Milk
    1/2 Banana
    3 tsp Baking Powder
    1 Egg
    1-2 ts Cinnamon

Tips

You can substitute the berries with whatever you wish, personally I divided the batter in half and add 1/2 raspberries to one, and 1/2 blueberries to the other.


Directions

Preheat oven to 200 C or 395-400 F

Mash a banana until it is smooth. In a bowl, combine egg, mashed banana and milk. In a separate bowl stir together both flours, baking powder and sugar. Combine the wet Ingredients with the dry, mix just until moistened. Fold in frozen blueberries.

Place paper-liners in a muffin-tin. Fill each muffin cup almost to the top. You should be able to divide batter among 12 muffins. Bake for 15-18 minutes until golden brown. Serve warm, or cold.
