Ingredients

2 wholewheat pitta bread
20g of low fat mozarella, chopped
1/2 a large tomato chopped
1tbsp of sweetcorn
black olives, chopped, (1 tbsp heaped)
garlic clove
1tsp of green pesto
Tips
Be careful not to use too high a heat, its just enough to heat the foodstuffs and melt the cheese without burning.
Directions
Toast the wholewheat pitta breads until they are golden brown and 'bubbled' enabling you to slice them along one side.
Chop all the ingredients, take one non-stick frying pan, (no oil is required for this recipe) and on a low heat add the pesto, garlic, sweetcorn, tomato and olives, stirring continuously until items are heated through.
Add the mozarella to the pan, take care to continue stirring the whole time, the cheese should melt pretty much straight away.
Taking the filling off the heat stuff evenly into the pitta bread.
Sprinkle with a favourite herb if required and serve.
Serving Size: serves two whole stuffed pittas
