Introduction

We only make these once a week. After eating oatmeal and being good this is our one real treat. There is nothing to hold the eggs in so this is a very loose burrito, but I love it. We only make these once a week. After eating oatmeal and being good this is our one real treat. There is nothing to hold the eggs in so this is a very loose burrito, but I love it.

Ingredients

    4 large eggs scrambled
    1 dash of salt
    1 dash of pepper
    1 large Hebrew Hotdog (reduced fat) Cut into chunks
    2 (10 inch) burritos

Directions

Scramble eggs with salt and pepper and set aside.
Spray nonstick pan with cooking spray and heat to meduim add hotdog chunks and cook until browned. Add egg mix and cook until desired egg consitancy is achieved. split mix into to parts and place each half on a tortilla. Wrap securely. (Hint: To heat tortillas and keep them soft. Place in a gallon zip bag with a damp papertowel and microwave for 10 seconds keep bag sealed until you use them.)
