Introduction

Ingredients

    2 T. Olive Oil
    2 cloves garlic crushed
    1 C. sliced mushrooms
    1 t. corse ground black pepper
    I small bottle white wine 7oz. Chardonnay works well
    1/2 C. Chicken Broth
    6 Butterflied Chicken breasts trimmed to 6 oz.each
    2 T.Mascarpone cheese


Tips

This is an wonderful meal that no one would ever think is healthy for you. Very low in sodium


Directions

Saute mushrooms in oil until soft.Add garlic and cook for 2 mins. Add white wine, water and black pepper. Cover and keep on low while broiling butterflied chicken breasts until cooked through. Add Mascarpone cheese to broth and blend. Add chicken to broth, cover and simmer for 10 mins. Remove chicken, cover with foil. Boil broth until it slightly thickens and reduces. Poor over Chicken.
