Ingredients

    3 C. old-fashioned oats
    1/2 C. packed brown sugar
    2 t. baking powder
    1/2 t. salt
    2 egg whites
    1 egg
    1 1/4 C. skim milk
    3/4 C. mashed banana
    1 t. vanilla extract
    3/4 C. semi-sweet chocolate chips.

Tips

Next time I will soak the oats in the milk overnight to get better distribution.


Directions

Mix dry ingredients well.
Whisk liquid ingredients well.
Mix together
Add chips. Spoon into greased muffin pans. Bake 350 for 18-22 min. or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean.
