Ingredients

Egg White (separated from one large egg)
1/2 cup Fresh Mushrooms, sliced
1/8 cup onion, chopped
2 Tbsp. non-fat sour cream
1/8 cup Kraft Shredded 2% Mexican Four Cheese blend
"I Can't Believe It's Not Butter" spray
Non-stick cooking spray
Directions
Separate the egg white from the yolk, put in small bowl and beat. Cook the egg in small pan sprayed with non-stick spray over medium heat until done. Cover the pan while cooking so the top gets done, do not stir.
While the egg is cooking put the chopped onion and sliced mushrooms in another pan on medium heat that has been sprayed with non-stick spray. While mushrooms and onion are cooking stir and spray with "I Can't Believe It's Not Butter" several times.
When the top of the egg is done cooking remove the pan from the heat, leave the lid on the pan.
When the mushrooms and onion are done cooking transfer the egg to a plate and spread the sour cream on it. Add the mushrooms and onions and fold in half. Sprinkle the cheese on top and put in the microwave long enough to melt the cheese (approx. 1 minute)
