A light, refreshing spring time salad... A light, refreshing spring time salad...

Ingredients

    3 cps. Spring Salad Mix
    1/4 medium white onion sliced thin
    2 tbsp Extra Virgin Olive Oil
    1 tbsp Alessi WhiteBalsamic Raspberry Blush Vinegar
    1/4 cp. Feta cheese (crumbled)
    1cp. Strawberry halves
    1/2 cp. blueberries

Tips

There are many different variations of vinegars such as fig, pear or champagne.... Try them all! Also tastes amazing with mandarin oranges, almond slices or spinach in lieu of spring mix.


Directions

Mix all ingredients in a bowl and toss lightly to incorporate dressing and to help soften feta. Enjoy immediately.

Serving Size: Makes approximately 4 -1.5 cup servings
