Introduction

This recipe was inspired by a Paleo site I frequent, but I adapted it with lower calorie ingredients. This is an amazing recipe and one of our favorite. Ingredients

    2 large eggplants
    Salt
    Pepper
    Armour Pepperoni (low sodium, low fat)
    Prego Veggie Smart Pizza Sauce
    Extra Virgin Olive Oil

    (other ingredients as desired, we often use mushrooms)

Tips

It's best to add pizza sauce, toppings, then cheese (in that order) to ensure you don't lose pepperonis!

Mushrooms and black olives are our favorite additional toppings, but I didn't add any into the calorie count for this recipe.


Directions

Preheat oven to 425 degrees.
Slice eggplants into thick circles/ slices.
Heavily salt both sides of each slice, then set aside for 30 minutes (this will draw some the extra tangy-ness out of the eggplant).
Wash the salt of the eggplant slices and pat dry.
Brush olive oil onto each side of the slices, then slightly salt and pepper each side.
Place slices on a cookie sheet (often takes two cookie sheets for two eggplants) that has been sprayed with olive oil cooking spray (you can use whatever spray you want, but the calories may be higher).
Place cookie sheets in the oven for 6 minutes.
Remove the cookie sheets and add pizza sauce, toppings, and cheese as desired.
Place cookie sheets back in the oven for 6 minutes.
Enjoy!

Serving Size: Makes 4 to 5 serving, a serving is 3 to 4 slices of eggplant pizza (depends on how large slices are).
