Ingredients

1 medium onion, chopped
1/4 c. sweet red pepper, sliced
1/4 c. yellow pepper, sliced
2 cloves garlic, minced
1 lb cooked roast beef, cubed or shredded
1 1/2 cups Enchilada sauce
1 teaspoon cumin
8 Smart & Delicious 100 Calorie Tortillas
1 cup cheddar cheese, shredded
1/2 cup sour cream
Tips
Nutritional facts don't include sour cream.
Directions
Spray saute pan with cooking spray. Add chopped onions, garlic and saute till tender. Add bell peppers and beef. When beef is heated throughout, mix in chili peppers and add 1 c. enchilada sauce. Fill 8 8" tortillas with filling sprinkling with cheese. Reserve 1/2 cup of cheese for top. Place side by side in a 9x13" pan. Pour remainder 1/2 cup enchilada sauce over top of the enchiladas then sprinkle remaining cheese over top. Bake for 30-40 minutes at 350*. Serve with plain greek yogurt or sour cream.
