Introduction

Ingredients

    1 large red pepper, chopped
    2 poblano peppers, chopped
    2 medium onions, chopped
    2 tsp olive oil
    1 15 oz can black beans, rinsed and drained
    1 14 oz can diced tomatoes with green chilis
    3-5 cups water
    1 pkg Trader Joe's Langostino Tails
    1 tsp ground cumin
    1 tsp chili powder
    1/2 tsp paprika
    1/4 tsp salt
    fresh ground black pepper, to taste
    4 T reduced fat sour cream

Tips

The original recipe is much more complicated and uses chicken instead. It also seems like it has too much water added, which is why I adjust it to one's taste. I happen to like very thick stews.


Directions

Saute onons until starting to soften. Add peppers and saute about 2 minutes. Add one cup of water and simmer until vegetables are cooked. Add corn, black beans, tomatoes, spices and 2 more cups water. Simmer for 15 minutes or so. Add langostino tails and simmer for another 10-15 minutes. Adjust proportion of liquid to your taste by adding more water if needed when you add the langotinos.


Serve in bowl topped with 1 T sour cream.

Serving Size: makes 4 2-cup servings
