Introduction

Great on its own or served as tortilla filling or a topping on a green salad. Great on its own or served as tortilla filling or a topping on a green salad.
Number of Servings: 4

Ingredients

    1 onion
    1/2 to 1 cup chopped carrots
    1 cup diced celery
    saute onion, carrots and celery in large skillet in chicken broth until softened
    Add a can of corn (drained)
    Add a can of black beans (drained)
    Add a diced cooked chicken breast
    Heat through. Just before serving
    Stir in 1 cup of FF (or light) sour cream
    Stir in 1 cup of shredded cheese blend
    Stir in 2 TBLS Dijon Mustard (more or less to your taste)
    Heat through until bubbly

Tips

I added a little salsa to the mix to give it a bit more zip.


Directions

This is something I will make often. It is great as a soup/stew by itself which is how I will most likely serve in the future. Paired with bread or chips and salsa it would be great. I input into my weight watcher tracker and it add up to 9 points plus per very generous serving.

Heat through until bubbly and serve with 2 soft flour tortillas (for tacos) or as a topping over greens.
