Ingredients

    3 baking potatoes, peeled and cut up
    1/2 large onion, finely chopped
    1/3 c freshly shredded cheddar cheese
    1 T olive oil
    2 T chicken stock

Directions

Boil your potatoes as if you are planning to make mashed potatoes - having peeled and cut them up first. When they are fork tender after about 15 minutes, remove them from the water.
While the potatoes are boiling, finely chop half a large onion and saute it in the olive oil until translucent and starting to caramelize.
Rice your potatoes (or mash them with a fork) and add the cooked onion and shredded cheese. Use a wooden spoon to stir the mixture together, adding the stock to help them stick together better but not so much that they become loose.
Add the potato and cheese mixture to pierogi dough rounds 1 t at a time and cook as usual for your pierogis.
