Introduction

Crispy, Hot, lo-cal, filling snack! Crispy, Hot, lo-cal, filling snack!
Number of Servings: 1

Ingredients

    Olive Oil 4 tbs
    White Flour 1/2 cup
    Corn Meal 1/4 cup
    1 small zucchini
    Salt and Pepper to taste
    Egg beaters 1/4 cup (or real egg if you wish)

Directions

Heat oil in frying pan.
Slice zucchini about 1/4 in slices (the thicker the slices the lower cal!)
Mix flour, corn meal, salt and pepper.
Dip zucchini pieces in egg then flour mixture. Lay in hot oil.
Cook about 2 1/2 minutes per side or until tender.

    I think the problem with this is the olive oil - 4 tbs is a lot, but in this recipe you're not actually EATING all that oil, just frying the zucchini in it. However, I have no idea how to translate the actual amount of oil used into calories... Hopefully the recipe author can update this info? - 5/25/08

    how in the h**l do you call 1150 cal. a low call recipe? is this a sad attempt at a joke, or most likely just pure stupidity. on to of everything else, how do you get over 1000 cal. out of one small zucchini. someone should read these recipes before they're posted!! - 3/4/08
