Ingredients

    1 pineapple
    3 T unsalted butter
    1/3 c dark brawn sugar
    1/2 c orange juice
    2 T dark rum
    2 cups vanilla ice cream

Directions

Cut top and bottom off of 1 fresh pineapple. cut off rind using serated knife. Cut pineapple in half lengthwise and discard corecut each half into 3-4 lengthwise slices and cut each slice in half horizontally.
While preping pineapple, heat 3 tablespoons of butter, 1/3 cup bron sugar, 1/2 cup orange juice, and 1 fl oz of rum in a large skillet over medium heat, stir until sugar is moistened. Add pineapple wedges in one layer, bring to a boil, cover the skillet and cook for 5 minutes without stirring.
Uncover skillet, raise heat to med-hi, turn wedges gently with a slotted spatule, and cook uncovered for 5-7 minutes, or until syrup is thick. Turn wedges gently to coat with caramel and transfer to individual serving plates, place 1/3 c icecream next to or on top of wedges. spoon caramel on top of ice cream
