Skinny Scalloped Potatoes
1 1/2 lbs. baking potatoes peeled and sliced
salt and pepper to taste
3/4 cup Reduced Sodium Chicken Broth
1/4 tsp. dried thyme
Can be cooked in microwave. Microwave, covered, on HIGH (100%) for 10 minutes or until potatoes are tender when pierced with the tip of a knife. (Because microwave ovens vary, time is approximate) Preheat broiler. Remover cover and broil until top is golden, about 2-3 minutes. Let stand 5 minutes before serving.
Cook potatoes 35-40 minutes on 375.
