Ingredients

    1 cup Almond Butter - (MaraNatha Natural Creamy & Raw)
    1/2 cup Trader Joe's Organic Canned Pumpkin
    2 Eggs
    1/3 cup Trader Joe's (100% Pure Grade A Maple Syrup)
    1/2 tsp Baking Soda
    1/4 tsp Salt
    1 TBSP Pumpkin Pie spice
    1/3 cup Dark Chocolate - (Private Selection 62% Cocao)

Tips

I used my large cookie scoop, 2 scoops per cup filled all 12 cups. The original recipe state these are best stored in the refrigerator.

~ Lower the calories by 35 per serving by leaving out the dark chocolate.

Directions

Pre heat oven to 250 degrees. Mix all ingredients together well. Fill a muffin pan with liners and spray liners with your favorite oil. Place 1/4 cup of batter into each muffin cup liner. Bake for approx 15-20 minutes or until tops begin to crack. Cool in pan on a wire rack for 15 minutes. Remove from pan and continue cooling on wire rack.

Serving Size: Recipe makes 12 muffins. Serving is 1 muffin.
