    2 Cups Almond Flour (I added 1/2 a cup more and one cup of instant oatmeal because I felt that one stick of butter tasted too buttery for me. The cookie came out very moist and almost more like a muffin.)
    1 cup instant oatmeal
    1 stick butter
    1 egg
    1/4 cup applesauce
    1 cup persimmon pulp
    3/4 cup brown sugar
    1 tsp baking soda
    Salt, Vanilla extract, Cinnamon, cloves, ginger, and cardamom to your liking.


Mix all your dry ingredients. Mix room temperature butter with wet ingredients and combine. Bake on a greased sheet pan for 15-20 minutes in a 375 degree oven.

Serving Size: I didn't count, but it makes about 22. 2" cookies
