    1 tbsp. olive oil
    1.5 pounds extra lean ground beef
    1 tsp. salt
    1 tsp. pepper
    1 large onion, diced
    4 cloves of garlic put through a press
    1 container, 26 oz. of Swanson unsalted Beef cooking stock
    3 cups water
    2 cups sliced carrots
    1 cup sliced celery, about 3 stalks
    1 12 oz. package Baby Bella mushrooms, sliced
    1 pkg. Pomi chopped tomatoes, no salt added
    .75 cup pearl barley
    1 whole bay leaf


Makes the house smell SO good!


Heat oil in large pot. Brown ground beef. Add chopped onions and garlic and saute until meat is browned. Add salt and pepper.

Add stock, water, tomatoes, celery, carrots, and mushrooms. Bring back up to a boil and then add barley. Bring back up to a boil, then turn heat down to a simmer, and cook covered for 45-60 minutes.

Serving Size: Makes 6 2 cup servings
