Introduction

Ingredients

2 medium zuchini (grated)
dash of pepper
6 large eggs
1/2 cup of reduced fat sour cream
3/4 cup grated cheddar cheese
Tips
These are delicious cold, great to pack for lunch. They freeze well too - approx 3 months.
Directions
Beat the eggs.
Add the sour cream and give it a quick beat to combine.
Add the grated zuchini, dash of pepper and grated cheese to the egg/sour cream mixture.
Mix.
Pour into a lightly greased muffin tray (or paper muffin cups) I spray my muffin pan lightly with oil to grease.
Cook approx 30 mins at 180C. Ready when they are golden.
