I revamped this recipe doubling, almost tripling the veggies, using sliced turkey pepperoni, and only 1 cup of mozzarella shredded cheese for the topping. It turned out great! Ingredients

    8 oz. medium tube pasta
    1 jar (28 oz.) spaghetti sauce, divided
    1 cup fresh sliced mushrooms
    1 pkg (8 oz.) Hormel sliced turkey pepperoni
    1/2 cup chopped green pepper
    1/2 cup chopped red pepper
    1/2 cup chopped onion
    1/2 cup grated Parmesan cheese
    1/2 tsp garlic powder
    1/2 tsp salt
    1/8 tsp pepper
    1/8 tsp crushed red pepper flakes
    1 can (8 oz.) tomato sauce
    1 cup (4 oz.) shredded mozzarella cheese

Directions

Cook pasta according to package directions. Meanwhile, combine 2 1/3 cups spaghetti sauce, mushrooms, pepperoni, green pepper, red pepper, onion, Parmesan cheese, garlic powder, salt, pepper and red pepper flakes in a bowl. Drain pasta; add to sauce mixture and mix well. Transfer to a greased 9" x 13" pan. Combine the tomato sauce and remaining spaghetti sauce; pour over top. Cover and bake at 350 degrees for 40-45 minutes or until bubbly. Sprinkle with mozzarella cheese. Bake uncovered, 5-10 minutes longer or until cheese is melted. Let stand 5 minutes before serving.
