Introduction

Ingredients

    1 filet white fish (tilapia)
    green curry paste
    1 cup vegetable broth
    1 cup evaporated milk
    cooking oil or fat (1tbsp)
    1 can mixed vegetables
    1/4 cup lima beans
    1/2 cup italian green beans
    brown sugar

Tips

Sugar can be reduced to half, although some is needed to offset the bitterness of the vegetable stock and green curry paste.


Directions

In non-stick pan, melt schmaltz and green curry paste together, over medium heat, stirring constantly with wooden spoon. Add canned vegetables and stir to coat. Add frozen vegetables and 1/2 vegetable stock and cook 2 minutes. Add milk and brown sugar, and return to boiling point. Add fish on top and cover -- cook/steam for ten minutes or until fish is white all the way through.

Serving Size: Makes two servings.
