Ingredients

1 med head Cauliflower
1/2 onion, chopped
3 Cloves garlic
1 egg, beaten
1 T Sesame Oil
1 T Low Sodium Soy Sauce
3 Green Onions, chopped
1/2 c. Peas, frozen
1 T Olive oil
Tips
Can put cauliflower in blender, cover with water and pulse a few times. Drain in fine strainer and squeeze out all water. I throw the peas in the microwave for a minute just to start the cooking process. You don't want to fry the cauliflower to long or it will be mush.
Directions
Grate cauliflower till consistency of rice, squeeze and drain as much water off as possible.
Heat olive oil in skillet, add onion and cook until translucent, add chopped garlic and stir fry 2 minutes.
Add the cauliflower, peas, and sesame oil, stir fry about 3 minutes. Push mixture to one side of pan, add beaten egg and scramble. When scrambled, blend in with cauliflower, stir in soy sauce and green onion. Remove from heat and eat.
Serving Size: Makes two servings.
