Introduction
This recipe is designed for the 17 Day Diet Stage 1 menu. It's heavy on vegetables and low on fat, replacing most of the usual mayonnaise with non-fat Greek yogurt. It's crunchy yet surprisingly creamy with a nice little kick from the red pepper. If you are eating the 17 Day Diet plan, eat in a salad or straight from a small bowl, or stuff a tomato with it! If your not, it would be great on bread as well. This recipe is designed for the 17 Day Diet Stage 1 menu.
