Ingredients

    Buckwheat, 1 cup
    Yellow Cornmeal, 1 cup
    Rice flour, white, 1 cup
    Granulated Sugar, 6 tsp
    fresh Ginger Root grated, 1 tsp
    Egg, fresh, 2 jumbo
    *Molasses, blackstrap, 2 tbsp
    *Soy Milk Plain Light, .25 cup
    I Can't Believe It's Not Butter, Light Spread (Soft) melted, 1 Tbsp, 1 serving
    Oikos Organic Greek Yogurt, Plain, 6 oz

Tips

*Try making extra and freezing them for later. They make a quick throw together breakfast when you have no time and are much better than Eggos.


Directions

I'm pretty simple when it comes to directions. Simply add all the ingredients together and stir them up, making sure to watch for lumps. Then add a ladle full of mix to a lightly oiled waffle griddle. Check in 2-3 minutes depending on how how your waffle griddle runs. When the waffle is nice and toasty, it's done.
