Introduction

Ingredients

    extra firm tofu
    quinoa
    chicken or veggie broth
    red bell pepper
    green bell pepper
    bunch green onion
    two large zucchini
    shredded carrot
    spicy ginger teriyaki (east-west)
    dash tamari
    olive oil or oil blend
    5-spice seasoning with extra ginger

    Adding a couple of cloves of garlic would be ideal!

Tips

I only used a dash of tamari because of the salt...tamari has a much richer flavor than regular soy sauce. Low sodium soy or just using teriyaki should work fine! Also use low sodium broth, the salt in the broth does not affect the flavor of the outcome.


Directions

Cook quinoa in broth according to package directions, usually one cup grain to two cups liquid.

Heat oil in wok or deep sauce pan. Add chopped peppers and onions until starting to gloss. Add garlic if using. Add chopped zucchini and shredded carrot, season with 5-spice and ginger powder (or grated fresh...I didn't have fresh at the time). Stir fry until coated with oil and seasonings and smaller pieces are starting to brown a little. Added cubed tofu then drizzle with teriyaki and tamari.

Stir in cooked quinoa.
