    2 cups black beans, soaked or simmered until softened; or one can rinsed and drained
    1/4 cup rolled oats
    1 egg beaten
    1 cup grated carrots
    1 small onion diced
    2 cloves garlic, diced
    Curry powder, cumin, crushed red pepper to taste


Spray saute pan with canola oil spray, sweat onion and garlic over low heat.
Lightly mash beans, add in beaten egg, 1 cup grated carrots and 1/4 cup oatmeal. Add in onion and garlic, spices as desired. Using a 1/3 cup, create 5 patties. Bake on parchment paper at 350 degrees, for 15 minutes, flipping halfway

Serving Size: makes 5 patties
